Quick and Easy Barbeque Baked Beans

 

INGREDIENTS

 

2 lbs Russet Potatoes (7-8 medium)                                

1 Stalk Celery chopped

1 Red or Yellow Bell Pepper chopped or 1/2 ea.                

4 Green Onions thin sliced

1-1 1/4 C. Mayonnaise                                              

1/4 C Sweet Pickle Relish            

3 Tbsp Southern Delight Basil & Oregano Italian Seasoning Blend

3 Tbsp Apple Cider Vinegar

1 Tbsp Course Black Pepper

1 Tbsp Sugar

DIRECTIONS

 

Scrub potatoes, and dice into 1/2" cubes and place in medium sauce pan, covering with water.  Do not remove potato skins.  Bring to a boil, then cover, reduce heat to summer for 15-20 min, until potatoes are fork tender.  Drain potatoes using colander and spread on a cookie sheet to cool for 10-15 min, then refrigerate until chilled (20-30 min).

Combine mayonnaise, Basil & Oregano seasoning blend, apple cider vinegar, course black pepper and sugar and stir.  Add celery, bell peppers, onions, pickle relish, and stir to combine well, refrigerating until potatoes are chilled.  Transfer potatoes to large mixing bowl, pour Mayonnaise mixture over potatoes and stir gently to coat potatoes well.  For best flavor refrigerate for 3-4 hours before serving.  Serves 8.  Enjoy!
