Crawfish Ravioli with Shrimp

 

 

12 Breaded Cheese filled  Ravioli

12 Peeled & De-veined 70/90 ct. Shrimp

4 oz Heavy Whipping Cream

1 oz Cajun Seasoning

1 oz White Wine

5 oz Vegetable Oil or Shorting

2 oz Shredded Parmesan Cheese

3 oz Unsalted Butter or Margarine

 

Preparation:

1.     Heat a medium sauté over moderate flame.

2.     Heat a medium sauce over moderate flame.

3.     Add Oil to sauce pan and let temperature reach 350°

4.     Add 2 ounces of Butter to sauté pan.

5.     Add Shrimp to sauté pan and sauté for 1 minute.

6.     Add Cajun Seasoning to sauté pan and simmer for 1 minute

7.     Deglaze the pan with White Wine

8.     Add Heavy Cream and reduce cream to a sauce consistency.

9.     Remove sauté pan from heat and fold remaining Butter into sauce.

10. Using strainer, fry Breaded Ravioli until Ravioli floats

11. Drain Ravioli

12. Place Ravioli in large soup bowl.

13. Top Ravioli with sauce and garnish with Parmesan Cheese.
