Irish Dinner

4lbs. Corned Beef

6 Large Carrots (Peel & Cut Coarsely)

6 Large Potatoes (Peel & Cut Coarsely)

2 Large Onions 1/4 Cut

I Medium Head of Cabbage Cut into 6 Wedges

Rinse Corned Beef

Fill large pot 3/4 full with water

Add seasoning pack and 2 bay leaves, 4 whole cloves of garlic, 1 tsp mustard seed or powder

1 tsp dill, 1 tsp pepper corns

Simmer brisket aproximately 4 hours or until tender

Add carrots and potatoes and simmer for 30 minutes

Add onion simmer 10 more minutes

Add cabbage to simmer last 10 minutes

When serving slice beef across the grain and serve with horseradish, dijon mustard and vinegar
