Pumpkin Cheesecake

 

 

1 cup of melted butter (2 sticks)

1 cup of sugar

2 graham crackers (crushed)

2 cups of pumpkin

2 cups of cream cheese @ room temperature

4 eggs

1 1/3 cup of sweet condensed milk

1 tbls of vanilla

1 tsp of cinnamon

3/4 tsp of nutmeg

1/4 tsp of cardamon

 

Process the butter, sugar, and grahm crackers together. Cover sides and bottom of spring form pan. Preheat oven to 350 degrees. Bake at 350 degrees for 1 hour. Turn oven off and open oven door. Let sit for 15 minutes. Refrigerate overnight. Top with fresh whipped cream and caramel sauce.
